Small Cheese Making Class next weekend

 We'll focus January's very small class on a few of the fun and easy cheeses that will easily turn you into a cheese maker! Impress your friends with cheesey offerings and try out a fun and different hobby that brings dividends of appreciation. You may find that you'll discover a passion for cheese as we have here at Morning Song Farm. It's easier than you'd ever think! Follow along with handouts and easy to follow recipes so that your success is insured when you repeat the steps at home. We'll talk about which milk to use, cultures, and why certified organic milk isn't your best choice.  We'll make three or four different cheeses; Garlic Ricotta, Herbed Queso Fresco,  Feta and Chevre  are among those we choose to make and sample during the class.  Don't be afraid to bring your appetite, as we nibble throughout! Class starts at 10:00. Arrive 15 minutes early if you'd like, to sample freshly made cheeses as well as our just churned butter with bread,  muffins and coffee, while meeting your fellow cheese loving adventurers! Get a chance to meet the farm’s beautiful Nigerian dairy goats, and pet our friendly herd. Bring a crunchy granola bar or two and you’ll be everyone’s best friend, especially Carl The Herd Leader who eats anything but really gets excited if it’s crunchy.
Tuition: Please, no impromptu arrivals. The class size is limited to a tiny FOUR participants for a reason, so we need to have firm reservations. 
Directions from South Orange County:
5 south to 76 (or 78 which is a little further but a bigger freeway) either way go EAST to the I-15. Go NORTH on I-15 and get off on Mission Road. At the end of the Mission Avenue off ramp, make a RIGHT. Go 100 feet or so, and Mission Road dead ends at the poorly marked Old 395/Stearling Road. Make a LEFT there, and go a couple miles and make your first LEFT at Rainbow Glen Road, which takes you under the freeway overpass. :) Rainbow Glen Road is very curvy, boasting one of the sharpest hair pins in the nation. Take it slow. At the crest of the hill, you'll enjoy a view in the little Rainbow Glen Road agricultural valley. MSF is one of the first farms in the valley, on your left. You will see a sign clearly marking our farm: Morning Song Farm, enter there and someone will be waiting for you to direct you to parking. 
Directions from North Orange County:
If you live in NORTH OC, you might want to take 91 east and I-15 south. Get off on Rainbow Valley Blvd which is the weigh station exit. At the end of the ramp, take a LEFT over the freeway, and once you're over the bridge there is a stop sign.  At the stop sign make a RIGHT, which is Old 395. Make your first RIGHT again at Rainbow Glen Road. Rainbow Glen Road is very curvy, boasting one of the sharpest hair pins in the nation. Take it slow. Directions from Riverside County:
Take I-15 south. Get off on Rainbow Valley Blvd which is the truck stop/weigh station exit. At the end of the ramp, take a LEFT over the freeway, and once you're over the bridge there is a stop sign.  At the stop sign make a RIGHT, which is Old 395. Make your first RIGHT again at Rainbow Glen Road. Rainbow Glen Road is very curvy, boasting one of the sharpest hair pins in the nation. Take it slow. At the crest of the hill, you'll enjoy a view in the little Rainbow Glen Road agricultural valley. MSF is one of the first farms in the valley, on your left. Directions from San Diego County:
Take I-15 NORTH and get off on Mission Road in Fallbrook. At the end of the ramp make a RIGHT onto Mission Road, which dead ends in 100 feet. AT the dead end, make a LEFT at the poorly marked Old 395/Stearling Road, and another LEFT at Rainbow Glen Road. Rainbow Glen Road is very curvy, boasting one of the sharpest hair pins in the nation. Take it slow. At the crest of the hill, you'll enjoy a view in the little Rainbow Glen Road agricultural valley. MSF is one of the first farms in the valley, on your left.
